      Recently moved back to the area and discovered a Japanese Restaurant in the Independence Mall. Having spent some time in Japan, I found Takumi's sushi to be as fresh and wonderful as I had in Kyoto. (Many places here offering sushi get their fish out of a bag "prepared" and quality is lacking as it sometimes has been refrozen several times) Really good places will prepare their fish daily, making their own brines and sauces. After talking with the owner/chef Hede Okubo, I found out he worked in several 5 -star hotels in Japan before coming to America. I also learned he was a sushi chef of the former restaurant he took over.Overall my review is this: Sushi: high quality/very good. Atmosphere is ok, and the bathrooms could really use an improvement. ( I was told they are getting ready to do a total renovation/expansion) Service was fine. I will definitely be back for more sushi!

      I think this is the best Japanese restaurant in DE. best sushi ; best hibach; best tempura and best dumpline. great !
