Darn if I don't believe this is the BEST sliced brisket anywhere! Get it from the fatty end and it will not disappoint. This was only my 1st visit, but I still say I have not had better sliced.
The Original sausage, while excellent, has to get in line behind Meyers (Elgin), Smitty's (Lockhart) and Luling Market. But that's pretty good company, so no shame there.
Mueller's looks like the iconic BBQ house it is. Great old space. And Wayne Mueller is one of the friendliest owners you will ever meet. This was my 1st visit and you would've thought I was a steady customer (which I would be if I lived close by).
No wonder this place is consistently rated one of the Top 5 in the state (which means Top 5 in the world!!).

We took a day out for a long lunch from work one day so I could experience ""real Texas BBQ!"" Well I didn't like it so much. The sausage was like eating smoke and some other odd flavor and the sauce on the tables looked (and tasted) like drippings of fat. Yuk. The ribs were exceptional, I have to say I enjoyed those quite a bit.
Also liked the atmosphere, just struck me as a really cool spot for a BBQ joint.
Worth it for the ribs but that is about it from what I tried.

I went to Mueller's after watching Food Networks Diners Drive INS & Dives. To say I was disappointed is an understatement, the drive is long the parking is terrible since my dining companion is in a wheel chair the parking lot is not very wheelchair friendly. Down to the food the brisket was tough and dry not tender at all and there is no flavor to the meat salt and pepper just don't cut it on cuts of meat like a brisket. The sausage was another disappointment I could not tell the difference between the regular and chipotle. The sides were ok but when I eat BBQ the sides are not the main attraction for me. The ribs were juicy and tender just lacked any real flavor other than smoke. I like the Smokey flavor of smoked meats but it should also have some flavor from spices not over powering but a nice balance. And if I need sauce to create a better flavor then it is not good BBQ to me, I like to eat my BBQ without sauce lets me know just how good the pit master is. I hope that I was there on an off day and would be willing to try again but not willing to make the drive for the fun of it, if I am in the area I would give it one more shot. I am not a competing business and I am a born and raised Texan, but I know that eateries at times have off days and hope this was one of them and that it was not a fluke just because they had a celebrity in the house.

The guys writing negative reviews are either one of two things. Either they aren't from Texas and don't know what real bbq is. Or they are competing bbq owners and are jealous of Louie Muellers. This place is the best I've ever had, and I've tried almost everything. Do yourself a favor and disregard the negative reviews because you will miss out if you don't try this classic American institution of fine Texas BBQ.
From the moment you walk in you feel like you are on a movie set of what a real BBQ place should look like. Its an old smoky warehouse style building with wooden picnic tables and huge fans that keep the place suprisingly cool even on a hot summer day. The moist brisket is incredible and accompanied with a dipping sauce that compliments it perfectly. The sausage is great. I recommend the regular because its more juicy but the jalepeno is pretty good as well. I've never bothered ordering the ribs because with brisket and sausage that good theres no need for it. The potato salad is excellent. Stay away from the cold slaw. If you are looking for good brisket and sausage, this is the place. Don't go expecting good chicken breast, ribs, cold slaw or anything else. Stick to what they are famous for and you won't be dissapointed.

AFTER CHECKING OUT THE REVIEWS (TEXAS MONTHLY, CITY SEARCH, WORD OF MOUTH) I DECIDED TO MAKE THE LONG TRIP OUT TO TAYLOR AND PICK ME UP SOME OF THIS WORLD FAMOUS BARBEQUE. I WAS SO READY TO BITE INTO SOME MOIST BRISKET AND TRY SOME OF THERE FAMOUS SAUSAGE AND DIPPING SAUCE. I WENT OUT AND SPENT A LITTLE UNDER 40.00. I GOT: 1 POUND OF BRISKET (7SLICES), 1 POUND OF BEEF RIBS (2 RIBS) A 1/2 POUND OF PORK RIBS (2 RIBS) AND 4 SAUSAGE LINKS (2 REG, 2 CHIPOTLE). MY BOSS AND I WERE READY TO HAVE US SOME GOOD EATS! THIS IS WERE EVERYTHING WENT WRONG... THE BRISKET WAS FLAVORLESS AND WAS CHEWY AND TOUGH TO EAT. THE BEEF RIBS HAD SO MUCH SEASONING IT WAS NEARLY INEDIBLE. IT WAS TOUGH AND PRETTY DRY (I DIDN'T EVEN FINISH IT, IT WAS A WASTE OF STOMACH SPACE) THE PORK RIBS WERE DECENT AND HAD A GOOD TASTE BUT WASN?T ANY BETTER THEN YOUR LOCAL: BILL MILLERS, POK-E-JO?S, RUDYS... THE SAUSAGE WAS MUELLER'S LAST CHANCE TO REDEEM THEMSELVE. I WISH I COULD SAY IT WAS GREAT BUT AGAIN WAS DISAPPOINTED WITH AN AVERAGE TASTE. AT LEASET IT WAS EDIBLE. I'M GLAD I MADE THE LONG DRIVE SO I COULD TELL YOU MY STORY AND SAVE YOU ALL THE GAS MONEY AND DISAPPOINTMENT.
My husband and I just moved back home to Texas after his military career. We just couldn't wait to get home so that we could have some Texas BBQ. We tried those new BBQ chain joints in Austin when we first got back and were not impressed the least bit. Then when we just happen to find Louie Mueller's, we felt at home as soon as we walked in the door. The BBQ was great and it gives you the hometown feel !
On the recommendation of several reviews and the fact that Louie Mueller's is supposed to be one of the top 25 BBQ places in the world, I decided to make the detour off of I-35 and try a little of everything. I was very disappointed.
The ""sample piece"" of brisket they give you while waiting for your order was dry and tough, so I asked them to cut from another slab for my order. It was a little better but not much. We also ordered smoked chicken breast, jalapeno sausage and beef ribs. The beef ribs were very tender and the best of the bunch. The sausage was very greasy and tough to cut, but had a good flavor. The chicken breast was in-edible! It tasted like fish. It probably was spoiled but I didn't bother mentioning it to them.
We also had potato salad, coleslaw and beans. The potato salad was very good. The coleslaw was unusually seasoned and was OK but not great. The beans were good.
Final verdict...I would not go back, but if you must go, I can only recommend the beef ribs and potato salad.

I don't know what the first reviewer was thinking when he didn't recommend Louie Mueller Barbeque but hey, this is the BEST BARBEQUE IN TEXAS! I moved to New Orleans in the 90's and on the way back to Austin I make a special trip to Louie Mueller barbeque. The brisket is sumptuous and the best anywhere. The ribs are to die for. I don't eat a lot of sausage so I can't rate it.
Your meal begins with sliding up to the counter and they give you a nice chunk of brisket to knaw on. I gotta tell you, when your chewing on that brisket you just about can't rightly think about anything else but I insist that you get some ribs too! They cook on the same pit that they used in 1947 when they stated. This ain't no fancy place. It's got wood tables and a paint job that I call barbeque smoke stain. The potato salad is great for a side along with the beans and please don't forget to get yourself an ice chilled long neck to go along with this fantastic meal.
Louie Mueller's is the Best I have ever eaten and I think that you will think so too!

Not sure what's going on. Read so many sterling reviews about the barbecue. Highest rated barbecue from Texas Monthly. Ate there this weekend. People behind the counter could not have been nicer. Sausage link good, nice flavor and spice. Beef rib tender and juicy, very little flavor. Brisket, maybe the worst I've eaten. Tough, could not tear apart, had to cut it. Not chewable, dry and flavorless. Side of bean just boiled pintos, tasted like a boiled bean. Don't forget, there is no sauce, just a cup of beef juice to dip the meat into. Glad to have made the journey, now I don't have to go back.

Don't let the smokey ceilings and tar covered windows scared you, Louie Mueller's is probably the best restaurant in Taylor...period. The food is good, but the best part of the experience is the Taylor hosipitality. Every customer gets a free piece of sample meet which you can't pass up. If you're in Taylor, you need to stop by to expereince it for yourself.
I have tasted B_BQue at eight of the top 10 places
listed on your top 10 and only one other compares to the wonderful tasty B-Bque that can only be found at Louie Mueller's, come and taste for yourself, you'll come back for more!!!!!!!!!!!!

This is the best BBQ in the nation as far as I am concerned. How can anyone in their right mind put Louie Muellers behind Pok-e-Joe's and Rudy's (unless they were given free meal coupons or something for the promotion)?
Louie's is the epitome of BBQ. Just going into the place makes you feel like youre going into a different era. The smokey walls, the small town people, the incredibly good BBQ that isnt overtly trying to cater to the ultra pretentious. Where else can you go eat BBQ within 100 miles of Austin and see people ride up on horses to stop by for some brisket (which is the most tender I have ever tasted)? Louie's is Americana at it's best. Louie's is Texas.

On an average day, the brisket at Louie Muellers is tender and juicy. All the fixings are available from the counter. Seat yourself, but you might want to sit by big sliding door in the summer time. They don't have AC and the pits are inside, so it can get pretty hot.

Yes, County Line is consistant. Yes, Stubbs has live music and fairly good food. But for the real bbq experience, you cant beat Luie's. First off, it's on the main street of a little town, second the white-washed building, third, THE WALLS (black with smoke) and most important, wonderful bbq and great sides. This place is so worth the short drive.
