I used them first in 2008 on a large cow elk that I dropped off for processing. The amount of meat returned looked a little light. The second time I used them was just this past season (10/2012) - I dropped off a nice lung shot bull in excellent field condition that weighed 270 pounds on the hook right after we skinned it, removed the forelegs and head. I asked for burger (with 20% beef fat added) and steaks only - no roasts. What they returned was 50 lbs of burger and 45 lbs of steaks. Based on comments from a butcher friend and past experience with other processors - my return was 50-60 pounds light. I won't be using Orvis again and cannot recommend them.
