The original Irish coffee was invented by Joseph Sheridan, the head chef at Foynes, County Limerick. Foynes’ port was the precursor to the now Shannon International Airport in the western area of Ireland. In the 1940s a group of disembarked American passengers from a Pan Am flight in the miserable winter months were served Sheridan’s concoction to help warm them up. They asked if it was Brazilian coffee, Sheridan told them they were drinking Irish coffee.
