The cream is vat pasteurized, not flash-heated, in a high-temperature heat exchanger, which takes extra time and costs more, but preserves the flavor of the ice cream. Flavors include vanilla, vanilla custard, French vanilla, mint, black cherry, blue moon, butter pecan, Caramel Collision, chocolate, chocolate chip cookie dough, chocolate malt, Coconut Joy, cookies n cream, Elephant Tracks, Lady Bug, Mackinac Island Fudge, maple nut, mint chocolate chip, New York Cherry, Rocky Road, black walnut, chocolate chip, cinnamon, orange pudding, peppermint stick, Praline Pecan, spumoni and strawberry. Cedar Crest Specialties maintains an ice cream parlor in Manitowoc. It also has operations in Cedarburg, Wis.
