My husband and I made our first on many trips to the Crawfish Hut in Rayne on Good Friday. The crawfish were big , juicy, perfectly seasoned and utterly delicious. I was really impressed that there were no dead ones and no just heads with out tails. The restaurant is very nice and clean and that indicates how the back looks so you know that your food is coming from a clean kitchen. The staff was very courteous and helpful. For someone on a sodium restricted diet, I got no salt crawfish and my husband's regular seasoned weren't as salty as most places do them. The bread pudding with praline sauce is worth leaving room for. The rest of the menu looked real good and we'll try it after crawfish season. We've already called friends and made plans to take them when we go back. It is a short drive from Lafayette and well worth it. I just wish that they had wine coolers or something other than beer.
