I stopped into the Middleton location of Carr Valley Cheese rather by accident because I had not been caught by the signage before. (Signage for this shop is not clear enough from Parmenter Street and the store front is rather uninviting. However, I had been referred to this shop by several other businesses ...The Good Neighbor City slogan for Middleton showed itself off here!) I sampled a FABULOUS BLUE CHEESE MADE FROM goat's milk called "Billy Blue Cheese" The aging process obviously does give this cheese a blue cheese flavor, but mind you, this a fabulous blue cheese; mild, but definitely has a blue cheese flavor, soft and creamy to the tongue and very, very tasty. I have had to take most blue cheeses in a dressing or drizzled with honey and decked with crushed walnuts to help me enjoying the flavors. However, I could eat this lovely off of the knife that cut through it!! Please try it! I am sure you will like it and so will your friends who insist they do not like blue cheese
